Manuka is a Maori word for a small, scrubby tree with the convoluted Latin name Leptospermum Scoparium. Manuka Honey comes from the nectar of the flower of the Manuka bush (Leptospermum Scoparium) which is indigenous to New Zealand. Manuka bushes grow throughout the country, particularly in the drier east coasts of both the North and South Islands. They are also important plants for regenerating eroded soil. By creating shade and shelter, they’re like natural nursery for slower, more delicate native plants.
Manuka bushes grow and blossom every year for a very short period, starting in early December (North Island) and ending in mid-January (South Island).
New Zealand pure raw Manuka honey is a complex superfood that contains an abundance of strong nutritional and medicinal benefits. It has around four times more the mineral content of other honeys and is rich in vitamins and potent antioxidants.
Medical grade antibacterial Manuka honey has been extensively scientifically researched and clinically proven to naturally support wound healing and reduce infections.
Most honeys have some antimicrobial activity, but lose this property when exposed to heat, light or bodily fluids such as blood and saliva. Manuka honey contains high levels of Methylglyoxal, and has been scientifically proven to have a property known as Non-Peroxide Activity. This means it still fights bacteria, fungus, viruses and bacteria – even staphylococcus aureus, which can be resistant to pharmaceutical antibiotics.
The rather special properties of Manuka honey are widely known, and many have been scientifically tested. Due to New Zealand food regulations, we can’t make any claims on the therapeutic or medical benefits of Manuka honey. But honey lovers tell us they use it for colds, sore throats and hay fever, and apply it to wounds, burns etc. There is also a mounting body of research surrounding the internal health benefits especially for digestive issues.
Most honeys contain a naturally occurring hydrogen peroxide (HPA). But Manuka honey contains something else, methylglyoxal (MGO), a sugar molecule found in most honeys in small quantities. This active component in Manuka honey can be up to 100x higher than other honeys and causes ‘non-peroxide activity’ (NPA).
In 1981. Dr Peter Molan MBE. a University of Waikato professor researched what he saw as the unique properties of Manuka honey. Dedicated to improving the whole industry, he also wanted people to know exactly what they were buying, while building a bright future for this incredible natural food.
We worked with Dr. Molan to create the most authentic New Zealand Manuka honey with nothing to hide. His advice helped with our decision to use the MGO rating number because this describes the amount of methylglyoxal in Manuka honey and to set our minimum MGO level at 300+ because that’s where the good stuff’s proven to kick in.
WHAT YOU NEED TO KNOW WHEN BUYING AUTHENTIK MANUKA HONEY
If you are looking for an Authentic Manuka Honey, you need to search a brand which you can trust. When you are buying Manuka Honey, you need to check minimum for the following criteria:
1.MGO or UMF ratings on the package— anything else is deceptive and very likely fake.

Dr. Peter Molan - Professor at the University of Waikako - extensively researched the unique properties of Manuka honey in 1981. His scientific decision was the basis for our decision to set the minimum MGO level for our Manuka honey portfolio at 300+, as "the good things have been preserved here". Naturally occurring hydrogen peroxide gives most honeys a mild antibiotic quality (HPA). But Manuka honey’s antibacterial activity comes from something else, hence the term ‘non-peroxide activity’ (NPA). That ‘something else’ is methylglyoxal (MGO), a sugar molecule found in most honeys in small quantities.

The Unique Manuka Factor (UMF)
The Unique Manuka Factor has long been the predominant labeling and classification system for Manuka honey. He was led by Dr. Peter Molan himself defines it to indicate the level of non-peroxide activity of a Manuka honey. For this, a Manuka honey was tested in comparison to a phenolic solution and the corresponding UMF value was then determined.( Typical UMF ratings range is from 5+ to 24+ or even higher.)
While the UMF was initially determined directly through a test, today it is calculated using the three measured components methylglyoxal (MGO), DHA and leptosperin. The decisive factor, however, is the ingredient MGO.
In addition to indicating the potency, the UMF label also acts as a seal of quality - the only relevant seal that exists for Manuka honey to this day. It was introduced in 1998 by the Unique Manuka Factor Honey Association (UMFHA) and is only given to its licensees. The UMFHA now has over 100 beekeepers in New Zealand.
The content of methylglyoxal (MGO)
MGO stands for methylglyoxal. It forms the naturally occurring compound that makes Manuka honey so special and is responsible for its antibacterial effect. MGO is a trademarked system for determining the methylglyoxal content. Since the discovery of the MGO in Manuka Honey (2006), the strength of a Manuka honey has been determined by precisely measuring the methylglyoxal content in mg per kg of honey.
The methylglyoxal content is very closely related to the non-peroxide activity of a Manuka honey. According to the current state of science, it is assumed that methylglyoxal is the main ingredient in Manuka honey.
The methylglyoxal content is determined together with other ingredients in independent laboratories accredited by the New Zealand government and shown in a certificate. The specification of e.g. MGO 500+ means that a Manuka honey contains at least 500 mg methylglyoxal per kg of Manuka honey. Typical MGO values range from 100+ mg / kg to 1700+ mg / kg from True Honey Co.
The True Honey's MGO Manuka honey rating system means that every jar of honey in New Zealand is made according to Prof. Dr. Henle is tested and certified for its MGO content and for its purity and quality.
Prof. Dr. Henle, head of the Institute for Food Chemistry at the TU Dresden in Germany, and his team discovered that methylglyoxal (MGO) is the decisive active ingredient in Manuka honey. That was the great scientific breakthrough after years of searching for the "Mysterious Manuka Factor".

Manuka honey has an antibiotic effect and destroys dangerous microorganisms - fungi, viruses, bacteria - much more effectively than any other honey.
